Colour Coded Knives
Colour Coded Knives Colour coding knife handles is a simple and effective method of reducing the risk of cross contamination.
There are no specific legal requirements to use separate knives for each different foodstuff, but generally the following code apply: Yellow - Cooked Meats Red - Uncooked Meats White - Bread & Dairy Products such as cheese Blue - Raw Fish Green - Salad & Fruit Brown - Raw Vegetables
Dependant on the type of knife the colour coding is normally relevant to the food prepared. For example: a boning knife is normally only available in red as it is used to prepare meat, whereas a filleting knife is blue and used for the preparation of meat.
