Traditionally, chef whites have been double breasted, long sleeved and made of white cotton. The chefs whites are usually reversible and this is to allow a chef to be able to hide any stains on their chef jackets. The concept of using white is supposed to signify the cleanliness within the kitchen.
However with restaurants and kitchens becoming more modern this has had an impact on the clothing worn. Light weight materials combined with a new short sleeve design have been used and a range of colours - especially black for apprentice chefs- have become very popular.
However the top chefs still prefer the traditional white as this shows a seniority in rank within their kitchen and to show the importance and high regard of their profession.
Marie-Antoine Careme, a French chef, is regarded as the developer of the current chef’s uniform and Escoffier is responsible for bringing the traditional chefs jacket to London, managing the restaurants at the Savoy Hotel and then at the Carlton Hotel.
